Recipe of the Week: Tiramisu!

A classic coffee dessert. This is a basic recipe that is simple and easy to make, using lady fingers rather than poundcake as a base. There are of course numerour variations to this classic dessert and with a bit of creativity, you can come up with your own perfect
rendition.

Ingredients: Layered Base
ESPRESSO, OR TRIPLE-STRENGTH COFFEE, 1/2 cup, room temperature
SUGAR, 1/2 cup
BRANDY or RUM 1/4 cup
EGG YOLKS, 2
MASCARPONE CHEESE, 1 pound
LADY FINGERS, 1/2-pound package
SEMISWEET CHOCOLATE, 4 ounces shaved
Ingredients: Icing
WHIPPING CREAM, fresh, 1 cup
VANILLA, 1/4 teaspoon
POWDERED SUGAR, 2 tablespoons
Ingredients: Garnishes
COCOA POWDER, for dusting
SHAVED CHOCOLATE
Directions
1. Line the inside of a loaf pan with large sheet wax paper.
2. Stir espresso, sugar and brandy in mixing bowl until sugar dissolves.
3. Measure out 1/3 of a cup and leave to the side. You will use it for soaking the lady fingers later.
4. To the rest of the mixture, whisk in egg yolks. Add marscapone cheese. Continue whisking until smooth.
5. One at a time, soak ladyfingers completely in the coffee mixture, taking care not to oversoak else the biscuits will break. Place crosswise in pan, trimming if necessary to create your first bottom layer.
6. Spread on half of the cheese mixture, then half of the shaved chocolate.
7. Repeat with another layer of soaked ladyfingers. Spread out the remaining cheese and then the rest of chocolate.
8. Cover with one last layer of soaked ladyfingers.
9. Bring up flaps of wax paper to keep your layers in their shape. Wrap the entire pan in plastic wrap and refrigerate for 6 hours.
10. When serving, invert pan on a serving platter, tapping the bottom to remove the "loaf." Remove paper.
11. We're ready for the icing. Whip whipping cream, vanilla and powdered sugar together until stiff. Spread over the "loaf."
12. Finally, dust with shaved chocolate.
And Voila! Every coffee lover's (and dessert lover's) dream! Vary the strength of your dessert by substituting brewed coffee for espresso or adding more shots. Substitute pound cake for the ladyfingers by cutting a pound cake into 1/2 inch cubes.
